Jaggery is loaded with minerals such as magnesium, potassium, calcium, selenium, manganese and zinc and it is highly recommended for anaemic people. No chemicals are used in preparation of jaggery as compared to refined sugar.Jaggery is a sweetener that is obtained by extracting cane juice, and in some countries by extracting palm juice.Once the juice is extracted, it is poured into large containers, so that any unwanted sediment settles and can be strained to produce a clear liquid. After this, the juice is placed in a flat-bottom pan where it is boiled, and the resulting product is what we know as gur or jaggery. While it is a natural sweetener, there are other benefits of it that make it a favourable wintertime food.
